All my children request these delicate Einkorn Waffles when they come for a visit. I use Einkorn Flour. Learn more about Einkorn here. These are the perfect breakfast for a large crowd. Using two waffle irons works even better because they taste better when eaten right off the hot iron.

 


These Einkorn waffles are easy to make, crispy on the outside and delicate on the inside.

The secret ingredient is yeast. Everything but the eggs and baking soda are mixed the night before. The next morning all you do is beat in the eggs and the baking soda. I love making these when company is over because it’s very quick to throw together in the morning as the kids and adults wake up.

Homemade blueberry syrup, fresh whipping cream and fresh berries. Golden and crispy waffles on the outside and delicate on the inside. Yummy, the perfect way to spoil the kids and our little munchkins!

How to make Delicate Einkorn Waffles

If possible use a waffle iron with small tines. The waffles just don’t taste quite as good with a big waffle iron. It takes about 3 minutes for each waffle in my waffle iron. Having two waffle irons works best if you have a large crowd.

Yeast will die if any liquid is over 120 degrees. To be on the safe side I try to keep the liquid temperatures between 100 and 110 degrees.

The night before:

Use a large mixing bowl, the batter will double overnight. Pour warm water into a bowl add sugar and yeast. Mix to dissolve and let stand 5 minutes. The mixture should look bubbly. Start over if this hasn’t happened, the yeast has probably died.

When your active yeast looks bubbly it's ready to go into your Einkorn waffle batter.

Add the milk, melted butter, vanilla, salt and Einkorn Flour to the yeast mixture. I mix with a whisk, but a mixer will work too. Cover with plastic wrap or shower cap and let stand overnight at room temperature.

Making Einkorn Waffles

Be sure and put the waffle batter into a large bowl. As you can see the waffle mix rises quite a bit. You sure don’t want a mess on your kitchen counter from too small of a bowl.

Have the table set with the fresh whipping cream, warmed blueberry and maple syrups and fresh berries. While the waffle iron is heating add the vanilla, eggs and baking soda to the batter. Pour Einkorn batter into hot iron, bake until they are golden and crisp. Best eaten right away. Enjoy!

DELICATE EINKORN WAFFLES

These waffles are the best waffles I've had, crispy on the outside and delicate on the inside.  The mix is made the night before, add vanila, a couple of eggs and baking soda the next morning and they are ready to go.

Servings 8 Waffles

Ingredients
  

  • 1/2 cup warm water
  • 2 1/4 tsp dry active yeast
  • 2 cups milk, warmed
  • 1/2 cup butter, melted 1 stick
  • 1 tsp sea salt
  • 1 tsp sugar
  • 3 cups Einkorn flour
  • 2 eggs
  • 1/4 tsp baking soda
  • 1 tsp vanilla

Instructions
 

  •  Pour warmed water (110 degrees)  into a large bowl (batter will double overnight) add yeast and sugar. 
    2.  Mix to dissolve and let stand 5 minutes. The mixture should look bubbly.  
    3.  Add warmed milk, melted butter, salt and Einkorn flour to the yeast mixture.  
    4. Blend together. Use a dough whisk, but a beater will work too. Cover  with plastic wrap and let stand overnight at room temperature. 
    5.  In the morning, as the waffle iron is heating up add vanilla, eggs and baking soda to the waffle batter.  
    6. Pour batter into the hot iron, bake until they are golden and crisp.
    Best eaten immediately! 

Notes

This recipe can easily be cut in half or doubled.
I use organic ingredients whenever possible; you should too.
