In my opinion life is much easier when you have a plan. For example, when I’m low on chicken bone broth roast chicken goes on the menu for the week. If you’re roasting one chicken, why not roast two at the same time?

How to Make Paleo Curry Chicken Salad
In a small bowl add 2 tablespoons of lemon juice and 1 tablespoon of apple cider vinegar to a cup of water. Cut up two red apples and add to the lemon water. This will help keep the apples from turning brown. Let the apples soak in the water for at least five minutes.
Cut up the roast chicken into bite size pieces and put in a large bowl. Add the celery, raisins, cashews and drained apples. In a small bowl mix the mayonnaise, curry, honey, salt and pepper. Add to the chicken. Stir. Use your favorite curry; it can be hot, spicy curry or sweet curry or masala. My favorite is the sweet curry. Delicious chicken salad! Yum!

PALEO CURRY CHICKEN SALAD
Ingredients
- 1/2 roast chicken, diced
- 1 celery stalk, chopped
- 1/2 cup raisins
- 1/2 cup cashews
- Swirl of raw honey
- 1/2 cup mayonnaise
- 1 tbsp sweet curry or to taste
- salt and pepper to taste
- 1 red apple, diced
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar raw
- 1 cup water
Instructions
- Mix apple cider vinegar, lemon juice and water in a bowl. Add the chopped diced red apple. Soak for at least 5 minutes
- Cut the roast chicken into bite size pieces put in a large bowl
- Add the raisins and cashews to the chicken, stir
- In a small bowl, mix the mayonnaise, honey, curry, salt and pepper
- Drain the apples, add to the chicken mixture, stir
- Add spiced mayonnaise to the chicken, stir
