PALEO CURRY CHICKEN SALAD
Use left-over roast chicken to make this delicious Paleo Curry Chicken Salad.

Ingredients

roast chicken, diced

celery stalk, chopped
1/2
cup
raisins
1/2
cup
cashews
Swirl
of raw honey
1/2
cup
mayonnaise
1
tbsp
sweet curry
or to taste
salt and pepper
to taste

red apple, diced
2
tbsp
lemon juice
1
tbsp
apple cider vinegar
raw
1
cup
water
Instructions
Mix apple cider vinegar, lemon juice and water in a bowl. Add the chopped diced red apple. Soak for at least 5 minutes
Cut the roast chicken into bite size pieces put in a large bowl
Add the raisins and cashews to the chicken, stir
In a small bowl, mix the mayonnaise, honey, curry, salt and pepper
Drain the apples, add to the chicken mixture, stir
Add spiced mayonnaise to the chicken, stir
Notes
Paleo Chicken Curry doubles easily. Use organic ingredients whenever possible.
