Paleo Curry Chicken Salad on a plate with cucumbers and sliced tomatoes.


Use left-over roast chicken to make this delicious Paleo Curry Chicken Salad.


  • 1/2 roast chicken, diced
  • 1 celery stalk, chopped
  • 1/2 cup raisins
  • 1/2 cup cashews
  • Swirl of raw honey
  • 1/2 cup mayonnaise
  • 1 tbsp sweet curry or to taste
  • salt and pepper to taste
  • 1 red apple, diced
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar raw
  • 1 cup water


  • Mix apple cider vinegar, lemon juice and water in a bowl.  Add the chopped diced red apple. Soak for at least 5 minutes
  • Cut the roast chicken into bite size pieces put in a large bowl
  • Add the raisins and cashews to the chicken, stir
  • In a small bowl, mix the mayonnaise, honey, curry, salt and pepper
  • Drain the apples, add to the chicken mixture, stir
  • Add spiced mayonnaise to the chicken, stir


Paleo Chicken Curry doubles easily.  Use organic ingredients whenever possible.
